How do PC's differ from NPC's?

I know the two abbreviations stand for Player Character and Non Player Character, but does that really mean you don't think so hard about the NPC in particular? Are NPC's really not so important to the plot of the RPG, whichever one it is?

There is a lot more too this than what I am saying, but the part I need help with is a rather wide reaching thing, so I thought posting it here was good.  I help run a game where original characters are allowed, but this obviously can apply even without original characters since people can make a canon sue.
